BALUARTE IS A PERSONAL PROJECT IN WHICH WE HAVE PUT ALL OUR EXPERIENCE AND ILLUSION IN ORDER TO CREATE A UNIQUE SPACE WHERE OUR CUSTOMERS AND FRIENDS CAN ENJOY OUR CULINARY PROPOSALS TO MAKE A SENSORY EXPERIENCE OUT OF THEM. THEREFORE WE TAKE CARE OF EVERY SINGLE DETAIL, STARTING FROM THE QUALITY OF THE PRODUCTS, CONTINUING WITH THE SELECTION OF THE WINES, THE UTENSILS, THE SERVICE, THE DECORATION… EVERYTHING IS IMPORTANT.
Our cooking is inspired by tradition, but not only by that. Our cooking wants to go further, harmonizing technique and experience together with soul so that they flow through unique local products such as boletus edulis or black truffles from Soria. In fact, we dedicate special days for such products. Our menu also includes excellent meat from our region, cheeses, wines, bread, butter and “torrezno de Soria”; as well as vegetables cultivated in our own patch. But tradition does not mean not looking for new flavours, products and influences from other types of cooking. We have staff from all over the world that bring their own experience to our team and enriches it.
That is how we understand cooking. Flavour is our challenge and so is obtaining harmonic dishes, delicate, light, well-combined and presented in the best possible way. Because we do believe that aesthetics takes part in the gastronomic experience. Since we first started our path in 2008 in this restaurant, situated in the monumental city centre of Soria, there have been many recognitions that we have received but none such important as the constant trust of our customers and friends.
